It all began around 1000 BC when the Romans started to take a closer look at grapes, the diseases that affected it and which soils it grew best in. During this time, they also began classifying the different types of grapes along with developing new pruning and irrigation techniques in order to improve their wines.
By the 17th century, the Catholic Church controlled most of France’s vineyards and brought in Dom Pierre Perignon to help them stop the second fermentation process that led to sparkling wines. However, the tastes of France and England’s royalty eventually changed and Perignon was told to improve the process instead. It was also Dom Pierre Perignon who brought cork stoppers back into light in lieu of the wood stoppers currently in use. Next came the discovery that yeast formed alcohol from sugar during the fermentation process and bacteria could make the wine turn sour. It was because of his discovery that Louis Pasteur was able to make greater volumes of wines that were safer to drink.
